Step 1
Preheat the oven to 180°C (fan setting). Line a roasting tray with baking paper and place the mini fillets on the tray. Drizzle with 1 teaspoon of olive oil, sprinkle with all the seasonings, and rub evenly over the chicken. Place the tray in the middle of the preheated oven and bake for 20–21 minutes. Once slightly cooled, shred the chicken with a fork.
