Preheat the oven to 180 °C (fan). Line a roasting tray with baking paper and place the chicken on the tray. Drizzle with olive oil and sprinkle all of the seasoning over the chicken, then rub it in evenly. Bake for 20–21 minutes. Once the chicken has cooled slightly, cut it into bite-sized pieces.
