Step 1
Preheat the oven to 180°C (fan setting). Line a roasting tray with baking paper and place the chicken mini fillets on the tray. Drizzle with extra virgin olive oil, sprinkle all the chicken seasonings over the fillets, and rub them evenly. Place the tray in the preheated oven and bake for 20 minutes. Once the chicken has cooled slightly, shred it.
