Step 1
Preheat the oven to 180°C (fan). Place 500g chicken mini fillets in a roasting tray. Sprinkle with 1½ tsp Cajun seasoning, 1 tsp sweet paprika, and salt and black pepper to taste. Drizzle 1 tsp olive oil over the chicken and rub the spices evenly. Bake for 20–21 minutes, or until cooked through. Once slightly cooled, cut the chicken into bite-sized pieces.
