Step 1
Preheat the oven to 180°C (fan). Line a roasting tray with baking paper. Place the chicken on the tray, sprinkle over the Cajun seasoning, sweet paprika, salt and black pepper, then drizzle with olive oil and rub it evenly over the fillets. Place the tray in the preheated oven and bake for 21–22 minutes. Once the chicken has cooled slightly, tear or shred it into pieces.
